This Filipino American History Month, Sunda celebrates the flavors and stories of the Philippines through a special collection of dishes and drinks, rooted in tradition and reimagined through our New Asian perspective.
In the documentary Food Roots, Sunda founder Billy Dec travels to the Philippines to explore his heritage through its people, places and food.
The experience deepened his connection to Filipino cuisine and helped inspire several dishes featured on this menu.
Inspired by the Filipino tradition of curing fresh seafood in citrus and vinegar, our hamachi features calamansi, passionfruit ponzu, charred pomelo, achiote and herb oil.

Ginataan refers to Filipino dishes cooked in coconut milk. Our version pairs mussels with coconut-lemongrass broth, calamansi XO butter, crispy shallots, herbs and warm roti.

Inspired by the celebrated Filipino vegetable dish, our pinakbet combines brûléed Japanese sweet potato, butternut squash purée, sugar snap peas, green beans and chili crisp.

The rich, comforting flavors of Filipino kaldereta are transformed into a savory pot pie filled with braised oxtail, roasted vegetables and bone marrow beneath flaky pastry.

Our crispy whole snapper is finished with a vibrant Filipino-inspired escabeche sauce balancing sweetness, acidity and gentle heat. Bold, colorful and made for sharing.

Inspired by the beloved Filipino street food, our Taho Sundae layers silken tofu, vanilla ice cream, arnibal, ube and pandan pearls, and crispy turon.

Our beverage team brings Filipino ingredients and desserts into four imaginative cocktails and spirit-free creations.

Mangojito
Rum, calamansi, mango and fresh mint create a bright, tropical twist on the mojito.
Island Old Fashioned
Rice and pandan-infused bourbon, toasted coconut and bitters reimagine the classic Old Fashioned.
Ube Crush
Pineapple, calamansi, ube milk, lemongrass, coconut milk and lime create a creamy, spirit-free tropical refresher.
Brown Butter Bibingka
Rice milk, brown butter and saline capture the comforting flavors of bibingka—with an optional rum floater.
